Baked Avocados

I got this idea for baking avocados from here and it looked so delicious that I had to try it. I freeze my avocados that are ripe but I can't eat so that I can enjoy them later and this is the PERFECT recipe for them.
I gathered my ingredients according to the directions on Pinterest, but really I just kind of went rouge on this and added what I wanted too. I was going to add some chopped onions (which is why it is in the picture) but decided to leave them out.

Ingredients:
  • halved avocado (fresh or frozen)
  • 1/4 cup whole wheat panko crumbs
  • 1 clove of garlic, minced
  • 1 tbsp  reduced fat Parmesan cheese
  • 1 tbsp basil (I used dried but you can use fresh)
  • 1 tbsp lemon juice
  • your choice of salsa, eye ball the amount
Since I used frozen avocados, I first rinsed them in warm water to get the frost off and to thaw them a bit. Then I placed them in a pan and turned on the oven to 450 degrees.

Next, in a small bowl, mix your panko crumbs, cheese, basil, garlic, and lemon juice. Mix it all up and set it aside.
 
Next, take your salsa and spoon it into the hole in your avocado and add as much as you want. I used 2 heaping spoonful on my avocados.
 
Then take your bread crumb mixture and place it on top. Split it evenly between the 2 halves and just cram it on there.



Then pop the pan in the oven for about 5 minutes or until the tops are browned. Oh they look soooooo good.
 
I served mine up with some reduced fat sour cream and some pita chips. DELICIOUS!

A serving is only one half so resist the urge to eat both of them :)
